It looks like a piece of wood with needles, but it is a tool for completely distributing the espresso or coffee grounds into the portafilter.

The purpose of a so-called “WDT tool” (WDT = Weiss Distribution Technique after its inventor) is the even and complete distribution of the espresso or coffee grounds in the portafilter. The aim is to avoid the “channeling effect”, i.e. the formation of fine grooves in the ground coffee if it is distributed unevenly.

To do this, the ground coffee is mixed using the needles so that no lumps remain and it is well distributed in the portafilter.
